GM Emanuel Berg wrote a complete french repertoire for the series "Grandmaster Repertoire" covered in three books, not surprisingly called "The French Defense". In the first 2 parts he covers the Winawer. In the last part he covers all the other replies possible to the French. Especially the last book has been pretty useful for me, as he recommends the most fighting line against the Tarrasch, and offers a fighting repertoire in the Exchange French as well.
